The rapper, 54, has called the music mogul, 66, one of the 'greatest talent scouts of all time'.
In a new interview, Snoop revealed he and Simon, who go back years, have nearly worked together, though it never materialised.
He said: 'For real, I have been talking about working with my boy Simon for over ten years.
'There are times when it could have happened, when it nearly happened, but one of our schedules always got in the way.'
Speaking to the Mirror, the Drop It Like Its Hot singer believes Simon has 'one great show left in him'.

Snoop continued: 'TV has moved on, the way people watch TV has moved on - but shows like The X Factor used to bring a nation together - and we need more of that.'
He was previously offered a judging role on the US version of the now-axed singing competition, though turned it down as he believed he would be better suited as a mentor.
Snoop now plans to meet Simon during his next visit to the UK to share his ideas with him.
He added: 'I got a few ideas that could be huge, but I got to speak to Simon first. I should be back in the UK in a couple of weeks - so I am going to take him out for a curry, and a business chat.'
Another one of Snoop's close celebrity pals is Sir David Beckham, with the rapper previously referring to the former footballer as his 'brother'.
He took his pal's side and publicly spoke out about David's eldest son Brooklyn being estranged from the family amid their bitter feud.
Speaking after Brooklyn's scathing six-page statement, he said: 'David is my boy, we have been friends for over 20 years now.
'We have seen each other's kids grow up, and one thing about David is that he is a family man.

'It doesn't matter what level of success he has had in his life, there ain't nothing more important to him than his family.'

He continued to the Mirror: 'No family is perfect right, but when you are a family in the public eye it's hard - it's even more of a pressure.
'I know the love that family has for each other - and in time, they are gonna work things out.'
Snoop Dogg and Sir David became friends in the 90s and both men have supported each other's families over the decades since.
