The star, 45, was sent home from the ITV2 show in a double exit during Monday's episode, which saw voted out by the camp and after being given the choice of taking another celebrity with him, chose Gemma.
She had her redemption in , after famously quitting the show back in 2014 after just 72 hours in the jungle.
And taking to her Instagram on Tuesday night, Gemma penned a heartfelt post dedicated to her long-term love Rami, 50, where she thanked him for giving her the 'love and encouragement' to take on the series again.
Sharing a loved-up snap of her cosying up the tuxedo-clad businessman, the reality star gushed that Rami was 'my calm in the chaos' and shared her excitement to finally become husband and wife.
'Rami, the love of my life… thank you for being my calm in the chaos and my strength when I needed it most,' she wrote.

'Every step leading up to the jungle felt easier because you were right there beside me, believing in me even on the days I doubted myself.
'Your support has been my anchor, my fire, and my safe place all at once. I couldn’t have done any of it without you… and I’ll never stop being grateful for a love like ours'.
She concluded: 'I had the right support this time round and the love and encouragement ❤️ I CANT WAIT TO MARRY YOU ❤️'.
Despite previously declaring she was planning three wedding ceremonies with Rami, during her stint in the jungle, Gemma stunned her campmates as she revealed they are now set to get a whopping four times.
Opening up on their wedding plans, she said the couple would end up tying the knot some day, but she's still unsure as to when.
While she also confessed she was undecided about where she wanted her nuptials to take place, saying she wanted to include an 'earthy, woody ceremony'.
The reality queen explained that she loved the idea of having a Sicilian-based wedding in the stunning hilltop town of Taormina.

However, Gemma said she was also considering exchanging their vows at Claridge's in London, but was concerned about the challenges of arranging as Rami's family live abroad.
Poking fun at her numerous plans for her big day, campmate Adam Thomas joked: 'So you could have four weddings?', as Gemma admitted: 'I don't know, otherwise how I am going to make it all work!'
Talking in the Bush Telegraph, Adam summed up the GC succinctly, as he gushed: 'Only Gemma Collins could get married four times to the same guy and I’m here for it.'
Gemma and Rami originally , enjoying an on-off romance for three years, culminating in a proposal at Christmas 2013.

However, just four weeks later, the reality star called off the engagement.
But after her split from TOWIE co-star James 'Arg' Argent, Gemma rekindled her romance with the businessman in 2020.
The two got engaged for a second time in 2021, and then on Valentine's Day 2024, Rami popped the question for a third time.
He got down on one knee in the Maldives, after whisking Gemma off on a birthday holiday, which she said took her completely by surprise.
He flew out hundreds of rose petals to cover the beach and laid out lights on the sand that spelled out 'Will you marry me?', before presenting her with a huge diamond ring inside a shell.
Gemma gushed that it was 'beautiful' and that she 'had no idea' it was coming, not even putting on any makeup or a bra, but 'wouldn’t change a thing.'
Back in 2024, she outlined her plan to have three weddings, with the main one in the UK, the second taking place abroad and then a 'formal one' for their closest family and friends.
She previously shared her desire for a woodland theme with a fairytale twist, inspired by her love of Disney's Maleficent and was hoping for a 'mythical and boho' atmosphere.
In true GC style, Gemma added that multiple celebrations means she was also planning to have several different wedding dresses.
Speaking to The Mirror about what fans can expect from her bridal looks, she said: 'I would love something similar to the lace one wore in House Of Gucci. I might even go back to my roots and wear something really Essex-like and over the top.
'At the moment I’m thinking something Italian-themed, then a ‘wow’ one with a huge train. I might even recreate ’s wedding moment with the tiara, I loved that.'

Determined to make the occasion a star-studded affair, she said she wanted DJ Fat Tony to perform and would even would put her old TOWIE pals on the guestlist, as there is 'no bad blood'.

Gemma said: 'They are my dog’s godfathers, after all. They’re honestly like family to me, I adore them.'
Rami was in full agreement, adding: 'Jedward are like our kids and they’re so good to Tristan. They’re part of our family now.'
Gemma also said she'd set herself a staggering challenge of 'topping' and 's $50 million wedding and teased that people are not going to expect what she has planned.
She told Daily Mail in October: 'Oh, it's definitely got my own spin on it. I think people will be quite shocked actually. Yeah, it's not gonna be what people expect. This is the real Gemma Collins, not the GC'.
The star's big act of commitment to Rami will be a huge part of her return to reality TV in : Four Weddings And A Baby.

Adam, 37, and David, 45, butted heads last week as the Waterloo Road actor broke camp rules - and again when he fell unwell and didn't wish to take on a trial with the former boxer branding him 'useless'.
But Gemma emphasized her support for her pal, as she shared a clip on Instagram of the moment David called him out for not wanting to do the trial.
She penned alongside the TV moment: 'We must protect my lovely friend @adamthomas21 at all costs! NEVER BE AFRAID TO PROTECT YOUR BESTIE @imacelebrity.
'Loyalty isn't loud, it's solid. It's showing up, backing them in rooms they're not in, and keeping their name sparkling clean like a diamond under pressure.

Gemma also made an appearance on I'm A Celebrity: Unpacked alongside fellow guest and host this week where she took a swipe at David.
Talk soon turned to the former heavyweight champion, with former TOWIE star Gemma hitting out against his boxing career, saying: 'David used to lose a lot.
'That concerns me. I've got to say, there was a moment in there when I thought 'How is he a heavyweight champion? Bless you David, and you keep losing, hun.'
'Do you know what I mean. I think maybe that got to him. But again, that just shows you we're all human.'
In addition, Gemma addressed the clash between Adam and David - which had been branded as 'bullying' by viewers.
Previous scenes saw Adam feeling unwell, but David responded he was acting 'useless' and expressed he didn't like men who acted like that.
David made this remark within Adam's earshot, as well as other members of the camp.
Gemma said of this: 'I think David Haye might have seen a weakness in Adam. There was times where I had to protect Adam in there.
'If I was going full GC mode on David Haye, and a lot of them, then it would've been a disaster in there but I had to remain calm and composed and just remember that I'm not here to be performative. I am here as me.
'And I think the fact that I stretched my arms out, I'm sort of saying to 'em all, without biting their heads off, 'enough'.'
She continued: 'Well, basically, I knew if it was ever gonna get too bad I would be taking David on.
'You know, bring on the next heavyweight champion fighting the world. Because if I feel that something's too much, I'm not afraid to step up.'
In response to Adam saying he didn't feel well and didn't want to participate in the upcoming trial, David said: Who gives a s***'.
Beverley Callard confronted David - who has already sparked backlash for his 'misogynist' comments - imploring him to have 'sympathy and empathy' for his campmate.
He replied: 'He's a grown ass man. I don't like guys when they're a bit useless. There it is.'
Appalled viewers took to X to fume the former athlete should be removed from the show, saying: 'David Haye, what a bully. Times like this he should be chucked out for being a d***head';
